400 gms flour 4 tbsp confectioners sugar 1 can sweetened condensed milk 200 gms butter 1 tbsp baking powder 10 tbsp dessicated coconut 1 tsp vanilla essence 1/2 C water coconut powder for dusting strawberry jam for coating cherries for decoration |
How to make a Coconut Cup Cake
- Sift flour and baking powder in a bowl and set aside
- Cream together butter, sugar, then add vanilla essence
- Mix water with condensed milk
- Add sugar to mixture
- Beat well
- Add flour
- Add dessicated coconut then mix well
- Turn mixture into dusted buttered cup cake tins
- Bake at 180 degrees until golden brown
- Cool
- Coat with strawberry jam
- Roll with coconut powder
- Top with cherry
