How to make CARROT CAKE!!!
(After grating the carrots, squeeze till juice comes out.
Add lemon or calamansi and sugar to taste -- Carrot Juice)
Then…
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. In a large bowl, beat together egg yolks, oil, white sugar and 2 teaspoons vanilla.
3. Mix flour, baking soda, and baking powder, salt. Then sift.
4. Mix with the egg yolk mixture.
5. Beat egg white until frothy then add 6T of sugar gradually... Beat until icing like...
6. Fold the egg white icing with the flour and egg yolk mixture.
8. Pour into prepared pan.

9. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
